Raspberry Filled Vanilla Cupcakes

You can’t go wrong with a good vanilla cupcake.  Simple, sweet, moist and unoffensive; you can dress a vanilla cupcake up with any flavor of frosting or filling or go for the classic vanilla cupcake with vanilla frosting combo.

I was craving something fruity and had a bag of frozen raspberries in the freezer begging to be used.  I decided to make a vanilla cupcake with vanilla frosting and a thick raspberry filling.  While filled cupcakes can seem complex, the cake, frosting, and filling recipes are very easy to follow.  I was very happy with how these cupcakes turned out and they received great reviews from friends.  Enjoy!

Cream Cheese Stuffed Snickerdoodles

On my most recent trip to Costco I was attacked by the smell of their warm, fresh churros.  I developed an intense craving for that classic cinnamon, sugar combination.  When I got home I immediately consulted the internet to find something delicious to satisfy my new craving.

It had been several years since I had had a snickerdoodle.  I am also a huge fan of cream cheese whether it’s in sweets or combined with avocado and tomatoes in an epic omelette.  Needless to say this recipe caught my eye.  The cookies came out soft, moist, and delicious!

Blueberry Pancake Cupcakes

These blueberry pancake cupcakes showed me yet again that breakfast in a cupcake is a great idea (see also Maple Bacon Cupcakes).  There is just enough cinnamon and nutmeg in the cake recipe to compliment the blueberries without overtaking them.

The cream cheese frosting was nice and thick and the maple flavor paired well with the lightly spiced blueberry cake.  While too sweet to eat for breakfast these cupcakes could make a successful appearance as a late morning snack.
